Hasselbeck Chicken Caprese Recipe


Ingredients: 

2, whole skinless, boneless chicken breast

1, ball of sliced fresh mozzarella cheese 

6 to 7, 1/4 to 1/2 inch slices of Kumato Tomatoes

10-12 fresh basil leaves, chopped

Olive oil, 

Salt and Pepper

Preparation: 

1. preheat oven to 350 degrees. 

2. Drizzle olive oil in an 8x8 or 9x13 inch glass or ceramic baking dish. Place the chicken in the dish. Prepare the chicken breasts by making 3 to 4 cuts across the length of each breast. Make sure not to cut all the way through the breast.

3. Place a slice of fresh mozzarella and tomato in each of the segments. Once each segment is complete with tomato and fresh mozzarella. Season with a drizzle of olive oil, salt, and pepper.

3. Cook uncovered for about 30 to 35 minutes until the temperature is 170 degrees.

4. Remove from the oven and let stand for 5 minutes. Top with freshly chopped basil and Enjoy!!!


Notes: 

    Best served with Balsamic Reduction and Cauliflower Rice
